I have a Jetwat 993AN motherboard with VIA Apollo Pro133 (VT82C693A) chipset -
Is it possible to change Bios on this motherboard?
I.E. - from VIA Apollo Pro133 (VT82C693A) to VIA Apollo Pro133A (VT82C694X)
The 994An is basically the same board but with different chipset.

Not possible - to 95% your system won't boot and the other 5% it won't work correct
No way to get around a chipset limitation with max memory as it's a hardware limitation
