I also just put some new thermal paste on cpu to try and stop it ovierheating and on the first boot after doing this it overheated and shut down quicker than it used to.

Any ideas?

MSI MS-6378 (probably a Rev 1.x), seems to be OEM'ed for Time Computers but using MSI standard Bios

Latest Bios is 1.9, do not use 3.x Bios !

Make sure your CPU and cooler are properly seated and your cooler is not twisted by 180 degrees. Also use a very slim cover of thermal paste. Your correct CPU temp and probably your system temp should be shown in Bios. Adjust Speedfan settings accordingly.
